When I first tasted this wine it was simply handed to me by Lyle, from Kermit Lynch, without any explanation, all I knew was that it wasn’t Champagne. I remember being enticed and excited, and once I tasted it, in love! It is fresh and has clean cut notes of pear and green apple backed by a certain tang. There is a minerality and almost French funk, with notes of white bean skin and blue cheese on brioche. This is one of those wines that is classic and cutting edge at the same time, great with food but also enjoyable just chatting with friends at a party.
